Cilantro is a cool-weather herb and is usually grown in early spring and fall. It will overwinter in mild climates as it is cold-hardy to 15 to 10 F. It readily self-seeds if allowed. We usually winter sow them and sometimes on top of the snow. The stems can be picked within 4-6 weeks or when they reach 6-8 inches in length. When the leaves start to look feathery they can be pulled or left to bolt/flower for the pollinators and or develop seeds that are used as spice (coriander). The umbels of clusters of tiny whitish-pink flowers attract small native bees, red soldier beetles (also a predatory insect), syrphid flies (hoverflies), and other pollinators.
