Hello everyone! It was harvest day for the Lion’s Mane mushroom (Hericium erinaceus). I was almost a little too late as the spines measured just a little over 1/4 of an inch. It took 12 days from cutting the bag open and mist the area with water 2-3 times a day. I ended up placing the block in a plastic bag for humidity and slightly open for airflow. It is delicate with a mild shellfish flavor and meaty and juicy when cooked. Lion’s Mane is nutritious, contains antioxidants, and is known to have anti-inflammatory properties. Based on research, it may boost the immune system, help with anxiety, and depression, and is good for brain health.
